Northeast Alabama Community College (NACC) has been approved to offer the short term certificate in culinary arts. This program, which includes such classes as Basic Food Preparation, Introduction to Pastries, Foundations of Baking, and Chocolates and Truffles, requires 22 credit hours to complete.
The program began successfully this fall semester with students enrolled in CUA 110 – Basic Food Preparation which is being taught on Tuesday evenings from 5 – 8 pm and will conclude on December 13. Topics being taught include safety, the history of food service, professional standards of conduct and ethics, credentialing, the kitchen brigade, tools, and techniques for preparing various types of food items. Successful students will be ServSafe certified as they learn to safely prepare foods for cooking.
Classes are being taught at Fort Payne High School, using the high school’s culinary building. Barbara Bonner, FPHS culinary teacher, is the instructor. Classes are open to those interested in earning a credential in culinary arts and to those who wish to learn for personal enrichment. New students are accepted any semester.

CUA 120—Basic Food Preparation Lab will be taught in the spring. Students will apply fundamental knowledge and skills in preparing a variety of basic foods. Spring semester registration will begin by appointment on October 3. Regular registration will be January 4, 2017.
The employment outlook includes an expected 10 percent increase in the number of cooks/chefs in Alabama through the year 2022 (CareerInfoNet 2015).
